The Culinary Entrepreneurship Program, the RESTAURANT ASSOCIATION OF SINGAPORE and Violet Oon’s Kitchen brings you this one-of-a-kind Master Food Styling Class taught by established, recognized culinary professional Denise Vivaldo. This will be the first time Denise Vivaldo is bringing this master class to Asia. This 1-day class is geared towards culinary professionals and students with an interest in food styling for print, television and film, and is especially helpful for people with some experience in the food styling industry. Expand your skills and enhance your credentials!

In this interactive class, participants will learn:

  • Poultry shaping, trussing and browning.
  • Burgers and sandwiches.
  • Pasta and sauces; plating, saucing, building height and movement.
  • Ice cream: how to handle real ice cream and making fake ice cream.
  • Desserts: styling slices of layer cakes and pies, and the use of dessert condiments.
  • Salads: use of dressings, extending life of greens, and making any salad stunning through use of color, texture, and contrast.
  • Asian foods and the styling challenges they present.
    Class schedule: 9:00 a.m. – 4:00 p.m.

PHOTOGRAPHER: AMOS WONG of Amospix will be sharing his expertise at the FOOD STYLING MASTER CLASS and will be photographing the dishes during the master class for you to view the photographic results in real time.

deniseDenise Vivaldo is a professionally trained chef with more than twenty years experience teaching and consulting in all areas of the culinary and hospitality industry. As a food stylist, Denise has worked on nationally televised shows, infomercials, movies, cookbooks, and many TV cooking series. In her work as a creative consultant she has developed original recipes for cookbooks, many of them New York Times best sellers. Denise is also the author of three well-received books on catering and entertaining: Do It For Less! Parties, How to Start a Home-Based Catering Business, and How to Start a Home-Based Personal Chef Business. Denise and Cindie Flannigan are currently writing The Food Styling Handbook, to be published in late 2008.
